Daniel Álvarez, owner of Pastelería Dalua, Ambassador for Cacao
Barry and expert adviser to restaurants on desserts, has a long
career and experience in patisserie.
Daniel has won a host of awards: fourth prize in "Les
Croquembouches" in Paris, runner-up in “Best Pastry Chef in Spain”
1999, Gold Medal at the Euro-American Pastry Championship in 2000
and member of the Spanish team at the 2005 and 2007 Pastry World
Cups.
As well as having taught patisserie courses at the Torrevieja
tourism school (2006-2007), he has given various demonstrations for
pastries and restaurant companies and different talks at tourism
schools, in addition to collaborations with trade magazines and
publishers.
