That is Sergio Herman.

Experience
Herman is co-owner of restaurant Oud Sluis in the Netherlands, which has been awarded three Michelin stars, and of restaurant Pure-C which has one Michelin star. He also plans to open a third restaurant in 2014 in Belgium.
As part of his collaboration with Callebaut, he was part of the World of Or Noir Chocolate in the Parisian lab. Two days of chocolate brainstorming and tastings led to the creation of two unique chocolate recipes that he uses in his restaurants.
